The Iberian pork prey or Iberian dam is for many the best cut of meat of this animal. It has a good proportion of infiltrated fat, resulting in a very tasty and juicy meat. These pieces of meat, depending on the size of the animal, usually weigh 500 grams. at 650 grams. and two pieces of this meat are taken from each pig.

  • This meat is located next to the shoulder, being part of the loin head, usually weighing between 500 to 600 grams. and being able to obtain two pieces of each pig.

    In addition to being able to be presented fresh, it can be used in the preparation of sausages such as loin and Iberian morcón.
