How to preserve an Iberian ham once opened

The Christmas holidays are over, and many of you may not have finished your piece of ham or shoulder, leading to the question: How do I store the ham to prevent it from spoiling? Here are some tips to ensure your ham or shoulder remains in ideal condition and as fresh as the first day.


Iberian  ham

Tip #1 - Keep the Ham in a Cool, Dry Place

Store it away from heat sources and windows. The ideal temperature is around 20°C.

Tip #2 - Place it on a Ham Holder

The best way to preserve a ham or shoulder in perfect condition is to place it horizontally or vertically on a ham holder. This also facilitates cutting.

Tip #3 - Cover the Exposed Surface with a Piece of the Ham’s Own Fat

Use the white part of the fat, not the yellow, as the latter may be "rancid" and could affect the ham's flavour.

Tip #4 - Cover with a Black Cotton Cloth

This protects the piece from external agents and prevents light from penetrating.

But… When Does Ham Expire?

Ham or shoulder have a very long shelf life. An unopened piece can last between one and two years, but it is recommended to consume an opened piece within a month.

If this isn’t feasible, we suggest taking the piece to specialised stores where it can be sliced and vacuum-packed. This way, you can preserve your ham with all its characteristics intact for up to 6 months, always in the refrigerator.
